Broccolini with balsamic vinegar

Grocery list

1/4 cup aged balsamic vinegar
Kosher salt
1 bag broccolini from Costco (stems trimmed)
4 medium cloves garlic, peeled and lightly crushed
3 Tbs extra virgin olive oil
6 medium button mushrooms, thinly sliced
3 slices bacon, as lean as possible
1/4 tsp crushed red pepper flakes
Freshly ground pepper


Fill a 6 or 7 quart pot 2/3 full of well salted water and bring to a boil.  Add broccolini and blanche for 3 minutes.  Drain it and transfer to ice water to cool.  Drain well and gently squeeze broccolini to remove excess water

Put bacon in a 12 inch non-stick skillet and cook over medium low heat until crisp; 10 to 12 minutes.  Transfer to a plate lined with paper towels and coarsely crumble.

Heat the garlic in oil in a large skillet over medium heat until the garlic begins to turn golden; 2 minutes.  Remove and discard the garlic.

Add the mushrooms and cook until both nicely browned and shrunken; 5 minutes.

Add the red pepper flakes and cook , stirring frequently for 10 seconds.

Add the cooled broccolini and cook, stirring often until tender and heated through; 3 to 4 minutes.  Drizzle with the vinegar and season to taste with salt and pepper.  Transfer to warm serving plate and garnish with bacon.
